I'll get some tried and true summer recipes to you pretty soon. I do have a few things that are EASY and impressive when the in-laws come into town. I make these all the time. Problem is, I reserve actually measuring ingredients for baking, and tend to make stuff up as I go along. So, I'll try to relay the recipes.
DINNER
London Broil
So easy - get a packet meat marinade ... The meat only needs to marinade about an hour. Put the oven on "broil", cook on your broiler pan for 5 - 7 minutes, then flip and cook another 5 - 7 minutes. It should be red in the middle. Let the meat settle while you use the oven for your asparagus. Slice into thin pieces at an angle against the grain just before serving.
Rosemary Garlic Mashed potatoes
Yukon Gold potatoes work best. Just peel 'um, dice 'um, and boil 'um. Then add about 2 T of minced garlic from a jar (don't use raw garlic, trust me), a bit of minced rosemary (if you're using fresh rosemary, a little goes a long way), butter and a few dollops of sour cream (not milk). Either use a masher or blender to mix and viola! Now on the Food Network they use a ricer, which looks sooo cool. However, since our kitchen is already full, I am unable to justify the space this nifty gadget will use.
Asparagus
Break the spears and throw away the tough ends. If you are using thick asparagus, peel it. Take out a cooking sheet, spread out the spears and drizzle with about 2T of EVOO. Generously sprinkle with kosher salt, thyme and garlic powder (garlic powder works better than the real stuff in this case). Cook at 400 degrees for about 25 minutes.
Corn
Open can of corn, put in sauce pan on medium heat.
Squash
Cut off ends of squash and slice in half. Sprinkle open sides with just about any seasoning you like, and steam (I just use a sauce pan with a little water, and just place the squash on top of one of those steaming basket things).
I promise all this stuff is so easy, yet it looks impressive on the plate. Believe it or not, it's also pretty healthy. Plus you can make it all in 45 minutes max, which is less time than any meal Rachel Ray makes, even though she claims they only take 30 minutes. And besides, this meal actually tastes good, which is more than I can say for Ms. Rachels' recipes.
BREAKFAST
Brown a package of sausage, just like you would beef for tacos, then drain. I think Neese's is the best, but I don't think you can buy it up North.
Get one of those Pillsbury cans of crescent rolls. Take a few of the FULL rectangular pieces and form them into a pie crust design in large muffin tins. Bake according to instructions on package.
In a mixing bowl, whisk 9 eggs with about 1/2 to 3/4 C of milk. Scramble eggs. When eggs are scrambled (they may be a bit more runny than normal due to the milk), add browned sausage. Add about 1/2 C of shredded cheddar cheese, and mix all ingredients until cheese is melted.
Scoop egg mixture into crescent roll "pie crusts" and serve individually with fresh fruit. Makes 4 servings.
Yet another easy recipe which is delicious and looks fancy. Maybe I'll make these soon and take a picture of the plates and post them. :-)

Mmmmm, this food sounds SO GOOD. I should have thought of trading recipes ages ago!! I'm definitely making that breakfast one this weekend.

This afternoon, our power went out (which should be a surprise to NO ONE who visits me) and stayed out until late this evening. So, I didn't have to cook anything at all, and Darryl treated me to dinner out! But, since I can't escape cooking every night, at least I have good looking new recipes to try! Thanks, Karen!! |
