Wow, it is hot, right? Who wants to heat up the kitchen cooking? Not me! So I've been looking for summer recipes online that involve minimal (or no) oven use, and minimal (or no) stovetop use. Obviously, the grill is fine. I thought it would be really easy to find cool summer recipes, but no! It's not!! So, do you all have any great things to eat in the summer? (*cough cough* Karen?) I just can't keep microwaving frozen quesadillas. It's killing me. Softly. With it's song.
Anyway, here's a recipe Darryl and I loved in trade for those I'm sure you will share.
Tuna, Tomato and Cannellini Bean Salad
3 T red wine vinegar
1 T balsamic vinegar
2 T olive oil
1 can cannellini beans (drained and rinsed)
1 can drained and flaked tuna
3/4 cup halved grape or cherry tomatoes
1 bunch minced scallions
1/2 cup minced basil
4 minced garlic cloves
8 cups salad greens
Mix together vinegars and oil in a salad bowl. Season to taste with salt and pepper. Add beans, tuna, tomatoes, scallions, basil, and garlic and mix well. Add salad greens and toss well before serving.

I'm on weight watchers, and Scott will eat NOTHING with the word "salad" in it. Honestly, he's worse than a 2 year old. I do eat a lot of tomato and fresh mozz. salad in the summer. Just cut them up, throw in some salt, pepper and EVOO, and you're done. It's surprisingly filling. Just make sure you get fresh mozz though ... BIG difference.

Also, you can get fat free jello pudding snacks, refreshing and actually somewhat healthy. By the way, I checked out the recipe you just posted as well, and it's only 2 pts. a serving. Guess I'll have to make it for lunch! Let me brainstorm...I'm sure I can put together a few recipes. |
