So, my mom has this awesome little Christmas cookie cook book that was put together by a bunch of people she worked with at the gas company. And I've made a bunch of the recipes, but by far the one that gets the most requests for more is the Rum Ball recipe. The best part is that they are SO EASY and no bake! You all are going to have to make these this year. :)
(3-4 dozen)
1 package vanilla wafers
1 cup confectioners sugar
1 cup pecans, finely chopped
3 tablespoons cocoa
1/4 cup light corn syrup
1/4 cup rum
1 teaspoon vanilla
1/4 teaspoon salt
Roll wafers between wax paper until they form fine crumbs. This yields about 2 and 1/4 cups of crumbs. Mix all ingredients together well and shape into balls. (It doesn't say, but 3/4 to 1 inch is a good size) Roll in confectioners sugar and place in a cookie jar (or tupperware container) for about 3 days to ripen.
Don't you love that word? Ripen?

I have not tried flavored rum - but that definitely sounds good! They're kind of sticky, too, before you roll them in powdered sugar, and I bet you could roll them in toasted coconut, too.

I don't think you should give them to kids... I don't think it would hurt, there's not that much alcohol per cookie, but still... Although, they probably would not like the taste - you can definitely taste the booze in these! |
